Eat With the Season: Fall Nutrition & Sunrider

Oct 16, 2026

Fall Is on the Menu!

There’s something about fall that makes a warm bowl of soup, roasted vegetables, or a crisp apple especially appealing.

Even here in Arizona, where October doesn’t always feel particularly cool, the changing season brings plenty of delicious opportunities to refresh what we’re eating.

And that’s good news for our health!

Eating with the seasons is a simple way to bring more variety, flavor, and nutrition to your meals.

It doesn’t require a complicated meal plan, expensive ingredients, or a complete kitchen makeover.

Sometimes, it starts with picking up a vegetable you haven’t cooked in a while.

What’s So Good About Fall Foods?

Fall brings an abundance of colorful, nutrient-rich foods. Here are a few worth adding to your grocery list:

  • Squash & Sweet Potatoes: These seasonal favorites provide fiber and beta-carotene, which your body converts into vitamin A. They’re delicious roasted, mashed, or blended into soups.
  • Apples & Pears: Naturally sweet and full of flavor, these fruits provide fiber, especially when you enjoy the edible skins. Pair them with nuts or yogurt for a satisfying snack.
  • Kale, Spinach & Other Greens: Leafy greens offer vitamins, minerals, and beneficial plant compounds. Add a handful to soups, stir-fries, or warm grain bowls.
  • Carrots & Beets: These colorful root vegetables bring natural sweetness, fiber, and valuable nutrients to your plate. Roast them together for an easy side dish.
  • Beans & Lentils: Not technically fall produce, but perfect for cooler-weather cooking! They’re affordable sources of plant protein and fiber that make soups and stews more satisfying.

The real benefit comes from variety.

Different foods provide different nutrients, so eating a range of colors and food groups helps you build a more balanced diet.

And remember, fresh isn’t your only option. Frozen vegetables and no-salt-added canned foods can be just as useful for putting together nutritious meals.

Make Seasonal Eating Simple

One of our favorite approaches to healthy eating is to build meals around a few dependable ingredients.

Start with vegetables, add a source of protein, include a whole grain or other fiber-rich carbohydrate, and finish with healthy fats.

For example, roasted squash, chickpeas, quinoa, and a little olive oil make a satisfying fall meal without much preparation.

Cook extra, and tomorrow’s lunch is already handled!

That’s the kind of healthy habit that becomes easier to maintain because it works with your schedule.

Healthy Living Tip: Build a Fall Harvest Bowl

Here’s an easy seasonal meal idea you can customize with whatever you have on hand.

Roasted Squash & Chickpea Harvest Bowls

You’ll need:

  • 2 cups cubed butternut squash
  • 1 can chickpeas, drained and rinsed
  • 1 apple, chopped
  • 2 cups chopped kale or spinach
  • 1 cup cooked quinoa or another whole grain
  • Olive oil, lemon juice, cinnamon or smoked paprika, salt, and pepper

How to make it:

  1. Toss the squash and chickpeas with a little olive oil and your preferred seasonings.
  2. Roast at 400°F for approximately 25–30 minutes, until the squash is tender.
  3. Divide the cooked quinoa between bowls and add the roasted squash and chickpeas.
  4. Top with chopped apple and greens.
  5. Finish with a drizzle of olive oil and fresh lemon juice.

Make it your own: Add toasted pumpkin seeds, walnuts, dried cranberries, or a spoonful of hummus.

Prepare extra squash and quinoa, and you’ll have the beginnings of another meal ready for tomorrow.

Your Healthy Habit for This Week

Choose one seasonal fruit or vegetable you haven’t eaten recently and find a way to add it to your menu.

That’s it!

No complicated plan. Just one small step toward greater variety.

Healthy living doesn’t have to be difficult to make a difference. It’s the everyday choices, repeated over time, that help build a lifestyle you can maintain.

Wishing you a healthy, colorful, and delicious fall!
